The washed process, specifically with Yirgacheffe beans, emphasizes their clean, fruity, and floral notes, making them highly sought after by coffee enthusiasts worldwide.
Here's the method used:
Coffee cherries are handpicked to ensure that only ripe ones are selected. This manual approach helps maintain quality since underripe or overripe cherries are avoided.
The picked cherries are then pulped, which involves removing the outer fruit layer (skin and pulp) to expose the beans inside. This is usually done using a pulping machine that separates the beans from the fruit while preserving the mucilage layer on the bean.
After pulping, the beans are left in a fermentation tank filled with water for about 24-48 hours. During this time, natural enzymes and microbes break down the mucilage on the beans.
Once fermentation is complete, the beans are thoroughly washed to remove any remaining mucilage. The clean, washed beans help bring out a crisp, bright flavor profile in the final product.
The washed beans are then spread out on drying beds (often raised beds) to dry in the sun. They’re regularly turned to ensure even drying and prevent mold or mildew.
